Chocolate Mint Torte

I spent the first ten years of my married life finding the awesomeist, bestist, most glorious dessert recipes around. Henceforth, I'll spend the next ten years working off the results of those tests.

I tried to find words to describe this dessert. However, in the interest of being family-friendly, let's just leave it at this:

Chocolate Mint Torte is just as delightful--if not more so--than "Better Than S*x Cake."

And we all know that anything that good should be experienced just once a year.

(*cough*)

What did you think I was referring to?

So.

Let me attempt to list off why I love this dessert:

  • It's both chocolaty and minty without either flavor being too strong.
  • It's smooth and creamy.
  • It's made in advance but the flavor and the appearance are not affected.
  • It's frozen, but doesn't give your teeth that bone-chilling shock.
  • It's not overly sweet. You can easily eat one (or six) pieces.
  • It's pretty.

Chocolate Mint Torte

27 Oreos, crushed (with whites)
1/3 cup butter or margarine, melted
1/3 cup chocolate-covered mint candies (Junior Mints)
1/4 cup milk
7 ounces marshmallow cream
2 cups heavy whipping cream, whipped*
additional chocolate-covered mint candies
chocolate syrup , for garnish
whipped cream spray, for garnish

In a bowl, combine cookie crumbs and butter. Press onto the bottom and 1 1/2" up sides of a greased 9" springform pan. Chill for at least 30 minutes. In a small saucepan, heat mint candies and milk over low heat until mints are melted; stir until smooth. Cool for 10-15 minutes. Place marshmallow creme in a mixing bowl; gradually beat in mint mixture. Fold in whipped cream. Transfer to prepared crust. Cover and freeze until firm. May be frozen for up to 2 months. Remove from the freezer about 15-20 minutes before serving. Remove sides of pan. If desired, drizzle a little chocolate syrup on each person's plate before adding the torte. Garnish with additional whipped cream and candies. 8 servings.


*Start with 2 cups (a one-pint carton) of heavy whipping cream (a liquid, found in the dairy section) and whip from there.

Lisa you made this one year for the staff and I made it last year for my Dad who loves anything chocolate and mint as does Miss Elli. They did love it and so do I. Your description of it was right on. I made your crock pot potato soup the other day for a staff meeting. They all loved it. I said that I made it in memory of you:)We order out now that you aren't here to provide us yummy treats!

Oooh, yummy! I had to laugh at your once a year comment, because when people comment on the exact spacing of my kids (all two years apart and born in Nov) I like to tease "well, we only have s*x once a year..."

Strangely, many people don't find it nearly as funny as I.
