Chili Con Carne

There are as many chili recipes as there are recipes for potato salad. And everyone has their favorite. This one happens to be mine. ALL MINE.

The original recipe is fabulous, but calls for more meat and fewer tomatoes and beans. Since I'm choosing to keep part of my soul instead of selling it all to the stores, I've learned to strreeeetch this recipe all while keeping the same happy results.

The original recipe also calls for ground beef, but firstly there's the "red meat isn't so good for you" thing, and secondly--I can't even say it--ground beef just weirds me out.

But what doesn't ruin my appetite is sweet corn bread on the side, and some delightfully evil toppings: corn chips, cheddar cheese and sour cream.

But don't take my word for it.


Chili Con Carne (the budget version)

1 pound ground turkey
2 tablespoons olive oil
4 whole garlic cloves, minced
2 large onions, chopped
1 whole green pepper, chopped
3 teaspoons salt
4 tablespoons chili powder
2 teaspoon ground cumin
2 teaspoon dried oregano
1/8 teaspoon cayenne pepper
3 cans (16 oz each) diced tomatoes
1 tablespoon of Beef Base Better Than Bouillon (which has no MSG)*
2 cups boiling water
2 cans beans, undrained (chili beans, black beans, pinto beans, etc.)

Brown the ground turkey. Drain and set aside. Heat oil, saute garlic and onions over low heat until onions are tender. Stir in green pepper and seasonings. Cook for 2 minutes, stirring until well mixed. Add beef and tomatoes. Dissolve bouillon in water and add to soup. Simmer**, covered, for about 1 hour. Add beans, simmer** 30 minutes longer. 8 servings.


*You can substitute 3 beef bouillon cubes. But unless you have a Trader Joe's or Whole Foods around, you'll be hard pressed to find a brand that is MSG-free. The Better Than Bouillon is found in most grocery stores and is seventeen kinds of handy to have around.

**In case you're new to cooking--that whole "simmer" thing is essential. Essential. Otherwise the soup will taste like dirty dishwater.

Better Than Bullion, with all of its non-msg goodness, makes me happy. I've been using it for years.

Grayden recently shared with me that he told the Short's of my constant use of ground turkey and they all had a good laugh. :)

Yup...still have this recipe of yours on file. I made it and had it ready for you after you came home from China. I think I will have to add it to my menu for this week.

ANYWAY!!!!!! I was going to tell you that I love chili, too, except that I can never remember how to spell it--with one "l" or two, so thanks for the clarification.

We've been eating chili lately, too! I dump an entire bottle of V-8 juice, the large can of diced tomatoes, a pound of ground beef (or TURKEY!), a packet or two of the Safeway brand chili seasoning, (beans if you like--but we don't go there around here without a HEFTY dose of BEANO...), and I throw in a bit of spiral pasta for the wee one for fun. Add a big helping of Colby cheese with a side of cornbread, and it's a hit! For a little extra spice, we either add the spicy V-8, or a nice handful of cayenne pepper. :)
