Broccoli Slaw
My friend made a fain-cee salad for me once that had these mysterious crunchy-type things stirred in.
Being a mannerly person, I hand-picked one of the buggers (not boogers! they're softer!) out of my salad, and opened my food-filled mouth to ask what it was.
She said: "Broccoli slaw. You can buy a bag of it at the store."
It's like there's a part of me that's stuck in a cave. Didn't know "slaw" could be anything other than cabbage.
So, I took that fain-cee overpriced idea and applied it to my own life using my cheapskate, use-it-all-up mentality. And this is what I came up with.
Take the stem of the broccoli--the part you usuallytrash compost, bless your hearts--and lay it out on your cutting board like-uh this:
Chop it in half so the stalk stays put, keeping the number of knife wounds to a minimum:

If you have the time and energy, you can peel off a bit of the stalk and then stick the stalk in the food processor to shred.
But I have very little time and not enough energy for all that mess.
And there you have it--extra vitamins and fiber for your salad:
You'll also have extra crunching noises at the table.
Just remember the golden rule: Chew unto others as you'd have them chew unto you.

That sounds like a good way to use up those broccoli stalks! I used to compost them, too. Now I just peel them with a vegetable peeler and cook them along with the rest of the broccoli. Now I'm kicking myself that I used to waste it!
Broccoli - what a wonderful invention. The stalks however, have always been a bit of a mystery to me. I was just sure I wouldn't like them. I'll have to give this a try...since I do love broccoli.
