Mozzarella Veggie Salad

If "cooking" is not your thing, this salad's for you. It's easy to prepare, yet doesn't taste like you drove by the deli counter and picked it up. Not that there's anything wrong with that--I'm just sayin'. It's a hardy salad too, and it doesn't require all that last minute fuss. Just chop, mix and go.


Mozzarella Veggie Salad

1 pint grape or cherry tomatoes
2 cups fresh broccoli florets
1 cup fresh cauliflower florets
1 cup cubed mozzarella cheese
3/4 cup balsamic vinaigrette

Chop the broccoli and cauliflower to pieces about the same size as the tomatoes. Then in a large serving bowl, combine all ingredients. 8 servings.
