Hunk O' Fennel

I saw some fennel at the store and immediately said to myself, "That hunk is mine."

Some people get excited about shoes and purses. For me? It's vegetables. Funny looking ones.

I got such a kick out of that particular plant that when I got to the check-out line, I put the "antlers" on my head, just to get a laugh from the crowd.

(Oh yes I did.)

(I'm just hoping I can remember these antics when my kids are teens, so I can embarrass them up right.)

So I bought that veggie knowing that I'm the only one in my house who likes it (until more are brainwashed won over). The white part has a licorice flavor and I like mine roasted in the oven alongside some onion.

Anyone else a fan? How do you make it?

Well...i can say that I have never had any Fennel. The things my family are missing out on!! Oh well!

I picked it up at my grocery store...though it is not one of the easiest vegetables to find. Unless of course, it has antlers over a foot long.

I like fennel/white bean soup. Don't have a recipe, since I normally cook by the seat of my pants, but here's approximately how I do it.

Saute some chopped onion with chopped fennel bulb. Pour in some chicken broth (may combine with some water) and bring to a boil. Add a can of white beans (or pre-cooked non-canned if you're a purist). Throw in some pasta shells or spirals or whatever shape you like. When the pasta is tender, add a generous helping of grated cheese (Parmesan, Gruyere, white cheddar...) and stir till it's melted. Add salt and coarse ground black pepper to taste. The final consistency should be fairly thick, so don't use too much liquid--the pasta should absorb the majority of it. Chop the fennel fronds and sprinkle a few on top. This recipe is a good way to introduce fennel to non-fennel fans as there are plenty of other flavors, and the fennel doesn't come on too strong.
