Wheat Free Taco Seasoning Mix
We could all use a little less refined flour in our diets, and a little extra dough in our pockets. This recipe does both. Most packaged taco seasoning mixes contain wheat flour and are highly overpriced. To the wheat-intolerant crowd, this one's for you.
Wheat Free Taco Seasoning Mix
1 teaspoon salt
1/2 teaspoon ground cumin
1/8 teaspoon garlic powder
1 tablespoon onion powder
2 tablespoons chili powder
This recipe makes enough for one pound of meat. I like to quadruple the batch, and store the mix in an empty chili powder spice container (relabeled, of course). Four tablespoons of this mix equals one packet of premixed seasoning. If you use this seasoning with meat, add up to 3/4 cup water to the pan to help mix the dry seasoning in.
For the vegetarian crowd, this mix is good to sprinkle on veggies while they're sauteeing in the pan. Especially tasty with zucchini, squash, peppers, onions, and mushrooms. It will add some zip to refried beans, pinto beans, or black beans as well.

This is a darn fine idea. I always hate buying those dumb taco seasoning packets, anyway and I cannot believe that I didn't think of this on my own. I'm sure at at one time or another the wife and I didn't make tacos because we didn't have a stupid packet labeled, "Taco Seasoning" but had all of the ingredients in our cupboard. We'll try it out soon.
As for cumin--it's the best spice in the world. If you DO eat meat, sprinkle it on hamburgers when you grill them to add a TexMex taste.
