Minted Peas
Your childhood memories (like mine) of peas may involve the gray-green type that come in a can, but letmetellya, there is beauty beyond the can. Hooray for frozen peas!
[Let's give another shout-out to fresh peas, which are totally divine, but have a harvesting season of about six minutes, and take an additional 18 hours to shell, giving you about two tablespoons of peas to eat. But they are divine, nonetheless.]
But back to these green goodies. Everyone can benefit by eating more greens, and peas are one of the more child-friendly of the bunch. This recipe turns the same-ol' same-ol' into something special. Enjoy!
Minted Peas
1 small package frozen peas
3/4 cup water, approximate
2 teaspoons olive oil
3 whole green onions, chopped
1 clove garlic, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped fresh mint
In a large bowl, microwave peas and water together for 5 minutes. Meanwhile, saute the onions and garlic in the olive oil. Add the drained and cooked peas, sprinkle with salt and pepper, and stir gently to combine. Will need to fry together for about 4 minutes. Toss in the mint leaves at the last minute and serve.
