Mexican Green Beans

Green beans are such a standby vegetable. But occasionally they need to get dressed up and go out for a night on the town. Enough of bland from a can! Viva la Mexico!

Mexican Green Beans

1 tablespoon olive oil
1 clove garlic
1/2 white onion, chopped
2 Roma tomatoes, chopped
1/2 cup water
1/2 teaspoon salt, or to taste
1 pound green beans, fresh, trimmed and cut in half
2 tablespoons cilantro, chopped

1. Place the olive oil in a large frying pan over medium-high heat. When hot, add the garlic and saute for one minute. Add the onion and continue cooking for another 2 minutes. Add the tomatoes. Cook for about 2-3 minutes more. Add the water, salt, and green beans. Stir. Cover and lower to medium heat. Cook, stirring occasionally for 15-20 minutes or until done. Stir in the cilantro.

2. Optional: Add 1-2 chopped serrano or jalapeno chiles.

Just wanted to thank you for this recipe! Stumbled across it when searching "Mexican Green Beans" (go figure, huh?), which I wasn't sure existed. I was apprehensive about green beans with tomatoes but the garden is exploding with tomatoes & I needed a good green bean recipe! As it turns out, it was my favorite part of the meal. If there were a rating system I'd give it 5 stars! Thanks again!
