Veggie Bites
Tis the season for social eating, and with that comes the big three: refined white flour, sugar, and dairy products.
I never realized how prevalent these ingredients were until I attended several "appetizer parties" where the only thing I could consume was a nice tall glass of water.
If you think that feels isolating and frustrating, you might be right. And I know that there are those of you out there who have walked a mile in my moccasins. This one's for you, as are so many of the recipes I post on my site.
So I'm in process of creating my own appetizer recipes, ones that *I* can eat and might even be enjoyed by others. Today's such recipe is a twist on the Ubiquitous Veggie Tray, which for me, can get to be a little blah after a while.
Veggie Bites
2 turnips, peeled and sliced into "cracker-sized" pieces
Prepared black bean hummus (using a bit less liquid to make the dip thicker)
Cherry tomatoes, sliced in half
Fresh carrots, thinly sliced
Paprika

Veggie Bites

On each slice of turnip, place a dollop of the black bean hummus. Then top with tomato and carrot pieces, using whatever artsy skills you might have. If desired, sprinkle the veggie bites with a bit of paprika. Place on a platter and serve.

I love this recipe. Do your kids eat any of these appetizers? My kids would just sneer at them and ask why didn't I just make tacos!
